“Siestas Cantina” Food Review Disney’s Coronado Springs Resort Dig Site Pool Bar

During my most recent construction update tour of Disney’s Coronado Springs Resort, I decided to grab a bite to eat.  Luckily, the Dig Site pool had just reopened, along with the Siestas Cantina Bar and Quick Service.

Disney's Coronado Springs Dig Site PoolI could’t think of a better way to enjoy a meal, than sitting by the beautifully refurbished poolside and tasting some delicious food.  Siestas Cantina has a pretty decent variety of meal choices that mainly center around a Mexican style cuisine.

Disney's Coronado Springs Siestas CantinaPersonally, I decided on the Siesta Nachos, which only took a few minutes to prepare.  I grabbed a lovely table between the pool and the sand volleyball court.  It was fun watching a game during my lunch.

I the nachos came loaded with ground beef, pinto beans, cheese sauce, cheddar cheese, onions, black olives, pico de gallo and jalapeno peppers (on the side by choice).  Each bite was full of flavor and the nacho chips were nice and crispy.  When I added the jalapeno peppers, it gave it just the right amount of tasty kick.

All in all, I will certainly go back to enjoy lunch here again.  I am looking forward to the fish tacos and the chicken wings.  I would highly recommend taking the time to enjoy a bite and then enjoy some relaxing pool time.
