Finally! After nearly two years of construction, the Three Bridges Bar and Grill at Villa Del Lago opened to the public, and they did it ahead of schedule. Disney had originally planned for the much anticipated floating restaurant to open along with the Gran Destino tower on July 9, but decided to surprise everyone by opening a month early.
Rain poured throughout the day, but that didn’t stop the grand opening from happening. Thankfully, the rain stopped at 4:00pm and the crowds, consisting of resort guests and cast members gathered around the Three Bridges. At 4:15pm, the management team cut the ribbon and invited everyone inside.
The menu is posted just outside the main entrance and is not overwhelming. It can be frustrating when a restaurant offers too much, but the Three Bridges has a perfectly thought out menu that is bold and concise. Vegan and allergenic choices are available upon request.
Upon entering, a greeter met me and asked for my name. She then referred me to my table. I was so lucky to be the very first guest to pass through the entrance and to be seated.
The outdoor dinning area is both elegant and refreshing. I could literally smell the fresh wood walking towards my table. There are so many different seating arrangements, ranging from bar stools to couches. My seat gave me a perfect view of Lake Lago Dorado and the Gran Destino Tower. The table and chairs were very cozy and a I could feel a nice breeze sweeping through, keeping things cool.
My waitress, Jaimie (we will talk more about her), presented me with a wonderful looking menu that was concise and very easy to understand. Each section was laid out by Sangria, Specialty cocktails, beer, wine, hot & cold beverages and food. Jaimie took the time to explain each page in full detail and was extremely knowledgeable about the food and drink choices. Honestly, she was a highlight of the entire experience and is a prime example of the incredible cast members working at Disney.
I usually don’t drink alcohol very often, but the selections looked very refreshing. I will certainly be heading back for an evening visit to enjoy a beverage. My goal was to have something delicious to eat and personally I was torn between the “Braised Pork Tacos” and the “Fried Shrimp Corn Dogs”. I had never seen Fried Shrimp Corn Dogs on a menu before, so I decided to try something new and fun.
When Jaimie walked out holding this entree, I was absolutely shocked!
If food has the ability to make you smile, even before you take your first bite, then you know you are in for a real treat. The presentation was first class. The wood platter specifically designed to hold the sticks upright was unlike anything I had seen before. The guest sitting next to me even remarked how wonderful it looked. The shrimp is local and fresh and the fires are seasoned with smoked paprika. The Cajun remoulade dipping sauce and the garlic aioli are both made fresh in house.
Now, if that wasn’t enough, one of the managers was kind enough to bring me the “Warm Manchego and Oaxaca Cheese Dip” to try. I must admit I am thrilled that she did, because it was outstanding. The cheese is imported from both Spain and Mexico and is topped with poblano peppers and crispy chorizo. The blue and yellow corn tortilla chips are made fresh in house. Fresh lime juice was drizzled on top for added flavor. The cheese blend is perfectly creamy and the poblano peppers gave it a spicy taste, without much heat. There is a hint of sweetness, that honestly I couldn’t identify, but the entire flavor profile was absolutely delicious.
After the meal, Jaimie presented my check along with two very unique postcards featuring the original concept art for the Three Bridges Bar and Grill. One postcard is intended to keep and the other is stamped with a Coronado Springs stamp. The object is to write about your experience and send it to someone you love. Brilliant idea!

Before leaving, I took some time to walk around the restaurant and check out all the wonderful details inside.
The bar is certainly the center focal point of the restaurant with these wonderful light fixtures above.
This very cool fire pit is really just water mist that is lit up from underneath. You can stick your hand inside with a problem. It really is an amazing effect that I have never seen before.
Another great focal point is this large mirror hanging over the fire place. Decorative lanterns take the place of a real fire. I’m sure fire is very controlled within the restaurant for obvious safety reasons.
Personally, I love the maps and artwork on the walls. The DuckTales comic strips are amazing and give just a little touch of that Disney whimsy and adventure.
Be sure to keep your eyes open, you never know what you might be able to spot.
Overall, I had a wonderful experience with my meal, the atmosphere and especially my service. The food is so flavorful and the presentation is world class. All of the cast members were friendly and extremely knowledgeable. The views are breathtaking and add an ambiance that is second to none. I loved it and now cannot wait for the Gran Destino Tower to finally open on July 9.
